Southern Comfort / Kahlua Balls
This is a recipe for uncooked cookies that are a real hit at special occasion parties. Since they do contain uncooked alcoholic beverages in them, I always put a sign by them at a pot luck that states that they contain alcohol just in case there are alcoholics attending who are going to AA or trying to quit.
Ingredients
2½ Cups Vanilla Wafers
2 Tbs Cocoa
1½ Cups Confectioner's sugar
1 Cup Pecans (very finely chopped)
3 Tbs White corn syrup
¼ Cup Southern Comfort (or bourbon or rum)
¼ Cup Kahlua (coffee liqueur)
Procedure
1. In a large bowl, thoroughly mix the vanilla wafer crumbs, cocoa, chopped pecans, and 1 cup of confectioner's sugar.
2. Add the corn syrup, Southern Comfort, and Kahlua. Mix well (the mixture should be very stiff).
3. Shape into 1 inch balls and roll them in the remaining confectioner's sugar.
4. Put the balls into a tightly covered tin box or other metal container for at least 12 hours before serving.
Note: These cookies keep well for four or five weeks.
